EL TRATAMIENTO CON ELECTRONES ACELERADOS PERMITE ASEGURAR LA INOCUIDAD DE LOS ALIMENTOS LISTOS PARA EL CONSUMO
Ante la imposibilidad de asegurar la inocuidad de los alimentos listos para el consumo y ante la imposibilidad de higienizarlos mediante tecnologías convencionales se ha estudiado la aptitud del tratamiento con electrones acelerados. Esta es una estrategia muy eficaz para higienizar la mayoría de alimentos, así como para ampliar considerablemente su vida útil. En general, no modifican las propiedades composicionales, texturales y sensoriales de los productos, salvo algunas excepciones.
