EFECTO DE LOS ACIDOS GRASOS SATURADOS SOBRE DIVERSAS LIPASAS MICROBIANAS
Se describe un nuevo microensayo que permite determinar con gran eficacia la inhibición de la actividad lipasa. Los ácidos grasos saturados provocan la inhibición de la lipasa de Candida rugosa, mientras que las lipasas de especies relacionadas con Bacillus muestran una respuesta variable, en función de su estructura tridimensional
